Navettes Provençales

Navettes Provençales right out of the oven…

Ingredients for 8
(If you are by yourself, divide the recipe or freeze half before you finish the whole batch)

  • 18 oz flour
  • 4 oz sugar
  • 3 oz of softened margarine
  • 2 large eggs ( plus 1 yoke for shining)
  • lemon rind
  • pinch of salt

Mix all ingredients with the melted margarine until the dough is smooth.  Divide the dough in 5 parts, sprinkle some flour on the working surface to prevent sticking and make a roll out of each piece.
Cut slices of rolls and shape them in an oval shape, pinched at the ends.
Put them all on a  greased baking sheet and make an incision in each one.  Let sit for 2 hours.
Use the egg yolk to shine the Navettes and bake 15 minutes  at thermostat 6 or at 350 degrees.

Enjoy! Close your eyes and  pretend you are at the patisserie-boulangerie  near the Vieux Port.

These keep for a long time in a can.  They make a great snack for travelers.  Line them up in a nice box as a present for hostess gift.
