My Favorite Oatmeal Cookie

May you have a Sweet New Year!

In honor of my birthday I am putting up my favorite recipe.  I used to have another one but this one  tempts  you to  go to the freezer and eat one anytime you feel you need some energy.  Remember you can cut down on the sugar somewhat You could add nuts, raisins or blueberries to the dough. You could also use 1/2 margarine and 1/2 oil if you like.  But you need at least some margarine to get the crispy texture.

As usual , you are advised to double the recipe if you need more than 3 dozens.  For that use 2 mixing bowls.

Ingredients:

1 cup of margarine softened

3/4 cup sugar

3/4 cup brown sugar

2 eggs

1 teaspoon vanilla or 2 teaspoons grated orange peel

1 1/4  cups flour

1 teaspoon of baking soda

1/2 teaspoon of cinnamon

1/2 teaspoon salt

3 cups quaker oats old fashioned

12 oz chocolate chips

Heat oven to 375F

Mix all wet ingredients.  Gradually add dry ingredients. Drop onto cookie sheet. Bake 8 to 10 minutes. Cool!

Don’t eat too many.  Freezing the cookies will not prevent you from eating them frozen. Offer some to your favorite buddies: 2 small ones or 1 big giant one in a pretty bag with a bow.   And if you really want to be good, give a whole bunch to your worse enemy.  You will not have any cookie left, but then again, you will not have any enemy left either.
